Maltodextrin (Engl)



Maltodextrin is an easily digestible carbohydrate made from rice, corn or potato starch. It's a white powder used in processed foods as a thickener, or a filler since it's fairly inexpensive.
Its flavor can be slightly sweet or almost flavorless. It is also used as a thickener for soups, gravies, and salad dressings.

Will Goldfarb introduces tapioca maltodextrin, an ingredient commonly used in restaurant kitchens to turn fats into powders. Goldfarb demonstrates how tapioca maltodextrin can turn a homemade chocolate-hazelnut-praline spread into “nutella soil”, which can be sprinkled on toast, cereal, ice cream, and many other desserts.

Isomalt (Engl)



Isomalt is the popular name for Isomaltitol which is a sugar substitute made from beet sugar. Over the past twenty years chefs, sugar artists and confectioners have found that Isomalt has many advantages over sugar especially when making showpieces, cake decorations, dessert garnishes and candy. Unlike conventional sugar, Isomalt is much more resistant to humidity and crystallization so decorative elements made with it have a longer shelf life and structural integrity.
The most common application is to use isomalt to make croquants, either on its own or in combination with other sweeteners. It's reduced sweetness allow chefs to make savory croquants in flavors that were not possible in the past.
