Huesos de Santo (Esp)
Ingredientes:
Para el mazapán: 200 grs. de azúcar, 100 gramos agua, 150 gramos de almendra molida.
Para el dulce de yema: 100 grs. de azúcar, 50 gramos de agua, 4 yemas de huevo.
Preparación:
Primero elaboraremos el mazapán: Hay que hacer en el fuego almíbar con el agua y el azúcar y añadir la almendra revolviendo muy fuerte hasta formar una pasta. Dejamos enfriar y preparamos el dulce de yema: Volvemos a hacer almíbar fuerte con el azúcar y el agua. Batimos las yemas de los huevos solas y añadimos a chorrito el almíbar mientras revolvemos. Lo echamos de nuevo en la cazuela donde se ha hecho el almíbar y lo ponemos a baño maría, revolviendo hasta que se espese mucho. Hay que tener cuidado de que no hierva, ya que se podría cortar la crema. Dejamos enfriar.
Montaje de los huesos: amasamos el mazapán y lo estiramos con el rollo de cocina sobre una superficie espolvoreada con azúcar glas. Cortamos tiras de 4 centímetros y luego éstas en cuadrados. Enrollamos cada cuadrado en un palo de 1 centímetro. Pegamos la masa con los dedos para formar unos pequeños cilindros y las pasamos por azúcar glas. Las sacamos del palo, dejándolas secar y rellenamos con dulce de yema.

Ingredienti (dosi per 4 persone)
400 g di farina di grano saraceno - 100 g di farina bianca - 200 g di burro - 250 g di formaggio Valtellina Casera Dop (denominazione di origine protetta) - 150 g di formaggio in grana da grattugia - 200 g di verze - 250 g di patate - uno spicchio di aglio, pepe.

This dish from the Valtellina area of northern Italy is a local legend, but was once considered a 'piatto povero' or poor-man's dish because of it's basic ingredients. A heavy dish like this would probably be enough calories and fats to work in harsh winter conditions day after day.
