La Colatura di Alici (IT) Anchovy Sauce (Engl)





La colatura di alici è un pregiatissimo distillato ricavato dalle migliori acciughe del Mar Mediterraneo, di limitata distribuzione perché goccia su goccia il suo gusto matura solo col naturale decorso del tempo. Conosciuta sin dall’antichità per la sua forte essenza afrodisiaca, i Romani la chiamavano Garum ed il suo utilizzo era considerato un tocco di classe nei banchetti più appetitosi in onore degli ospiti più prestigiosi.
Si trattava di una salsa di pesce cremosa ottenuta dalla macerazione di strati alternati di pesci piccoli e interi, probabilmente alici, e grandi pesci tagliati a pezzetti, forse sgombri o tonni, con strati di erbe aromatiche tritate, tutto ricoperto da sale grosso.
Usata naturalmente come condimento per la pasta, la colatura dona un gusto che è un piacere assicurato per la tavola. La sua forte essenza è particolarmente adatta per esaltare i sapori di moltissime pietanze, piatti di mare o di terra, verdure grigliate o in padella.

Descrizione

La colatura è un liquido ambrato ottenuto dal processo di maturazione delle alici sotto sale, seguendo un antico procedimento tramandato di padre in figlio dai pescatori.
Per farla bisogna rispettare regole semplici e tempi precisi. Andiamo alla scoperta dei segreti della colatura.
La materia prima di partenza è costituita dalle alici (o acciughe) pescate nel periodo primaverile, da fine marzo a inizio luglio. A Cetara i pescatori fanno coincidere l'inizio della pesca il 25 Marzo, festa dell'Annunciazione, e la fine il 22 luglio, con la ricorrenza di Santa Maria Maddalena.
Le acciughe, appena pescate, vengono private della testa ed sviscerate (''scapezzate'') a mano, poi si mettono in un contenitore, cosparse (''inzuscate'') di sale marino abbondante e mantenute per 24 ore. Quindi vengono prese e messe in una piccola botte in legno di castagno o di rovere chiamata ''terzigno'' (un terzo di una botte) , sistemate con la classica tecnica ''testa-coda'' a strati alterni di sale. Completato il lavoro, il terzigno viene coperto con un disco in legno, detto compagno, sul quale si collocano dei pesi (le pietre marine). Per le prime 48 ore si esercita una pressatura maggiore, quindi si passa a livelli di pressione inferiore. Il liquido, per effetto della pressatura e della maturazione del pesce, comincia ad affiorare in superfice. Mentre nel normale processo di conservazione delle alici viene prelevato ed eliminato, esso è la base per la colatura. Raccolto progressivamente man mano che si produce per effetto della pressatura e dell'azione del sale, il liquido viene inserito in boccioni o grandi bottiglie di vetro. Mentre procede la maturazione lenta in locali freschi ed areati (la temperatura ideale è di 18-20 gradi), viene esposto a fonte di luce diretta del sole per fare evaporare l'acqua e avere più concentrazione.
Al termine della maturazione (circa quattro, cinque mesi), in genere fra la fine del mese di ottobre e gli inizi di novembre, tutto è pronto per l'ultima fase: il liquido raccolto raccolto e conservato viene versato nuovamente nel terzigno ove le alici sono rimaste in maturazione. Così, colando lentamente attraverso i vari strati dei pesci, ne raccoglie il meglio delle caratteristiche organolettiche, fino ad essere recuperato, attraverso un apposito foro praticato nel terzigno con un attrezzo chiamato vriale, e trasferito in un altro recipiente. Da qui può essere infine filtrato con l'uso di teli di lino, chiamati cappucci. Il risultato finale è un distillato limpido di colore ambrato carico, quasi bruno-mogano, dal sapore deciso e corposo.
Agli inizi di dicembre la colatura è pronta per un rituale antico: ogni famiglia se la procura per condire gli spaghetti o le linguine, immancabili nelle cene della Vigilia. Una tradizione vera, molto sentita, che ogni ricorda ai cetaresi la propria storia di popolo marinaro.

Squash Blossom Beignets with Goat-Cheese Fondue (Engl)

CHEF LOUIS MOSKOW'S SQUASH BLOSSOM BEIGNETS
WITH GOAT-CHEESE FONDUE
(About 8 servings)

40 squash blossoms
1 cup flour
1 cup plus 2 tablespoons soda water
1 egg
2 quarts neutral-flavored vegetable oil
1 pinch salt
For the goat-cheese fondue:
1 tablespoon unsalted butter
1 shallot, minced
2 cups heavy whipping cream
11 ounces goat cheese (Montrachet is a good choice)
1 tablespoon chopped herbs
Pinch ground cumin (optional)
Salt and pepper to taste
For the tomato sauce:
2 ounces olive oil
1 tablespoon chopped garlic
1 red onion, diced
1 tablespoon tomato paste
4 ounces white wine
1 (16-ounce) can plum tomatoes (or chopped fresh tomatoes)
5 basil leaves
1 bay leaf
Salt and pepper to taste

INGRÉDIENTS

4 personnes

•- 800 g de filet de morue salée
•- 1 petit fenouil en bulbe
•- 1/4 de l de sauce rouille
•- 2 c. à soupe de dés d'olives niçoises
•- 1/2 l. de soupe de poisson de roche
•- 4 belles langoustines royales
•- 2 c. à soupe de dés de tomate
•- 1 filet d'huile d'olive du pays
•- 4 jeunes mini poireaux étuvés
•- sel, poivre du moulin

PRÉPARATION
- Préparation : 50 mn
Dessalez la morue à l'eau froide courante, pendant 48 heures.

Préparez les garnitures : dés d'olives niçoises, dés de tomate mondée, brunoise de fenouil étuvée à l'huile d'olive.
Blanchissez les jeunes poireaux et les faire suer. Coupez en filets (sans peau, ni arête) la morue, en forme de grosses lanières. Pochez-les dans la soupe de poisson.

Dressez le poisson sur 4 assiettes en forme d'étoile. Ajoutez au milieu les poireaux étuvés roulés en spirale. Mettez-les sous cloche pour les tenir au chaud.

Réduisez la cuisson de la morue, incorporez les dés de fenouil étuvés, la tomate et les olives. Portez à ébullition. Liez, hors du feu, avec la sauce rouille. Rectifiez l'assaisonnement. Nappez les filets de morue.

Décorez avec de l'aneth en branches et posez une queue de langoustine pochée à la vapeur sur chaque assiette.

Epelde & Mardaras es una galería de arte ubicada en un tercer piso. Emilia Epelde y Mikel Mardaras son una pareja de artistas que decidió convertir la mitad de su casa en una galería de arte donde se exponen diferentes trabajos. No contentos con esta curiosa idea, han decidido poner una mesa en su galería, en la que además de ver la exposición de turno se pueda degustar un menú hecho con mimo por los propios artistas. El Gallinero es un restaurante en el que se pueden comer tres platos: pollo, huevos y ensaladas, eso sí, de mil formas diferentes. El Gallinero hace unos 450 huevos fritos a la semana. Lleva abierto justo un año y su éxito reside precisamente en la sencillez de sus platos. En Legutiano hay un restaurante en el que reciben al comensal unos expositores, tipo pescadería, donde se muestra el género que minutos más tarde se va a poder degustar. Se elige lo que se quiere comer, pescado y sobre todo marisco, se cobra al peso y se pasa a la sección donde te cocinan tu compra, una forma diferente de ir a un restaurante. ¿Hay gente capaz de comerse una hamburguesa de un kilo de carne? ¿y una de cuatro kilos? En un restaurante de Bilbao preparan estas pantagruélicas hamburguesas, además de sándwiches de medio metro y bocadillos de salchichas de 53 centímetros.

Ingredienti per 6 persone:

550 gr di riso, 100 gr salame dla duja (salame fresco di fegato), 50 gr cotenne di maiale,
50 gr di lardo, 1 osso di prosciutto crudo, 1 cucchiaio di olio extra vergine doliva, ½ bicchiere
di vino rosso, sale, pepe, 1 cucchiaio di parmigiano.

Verdure:

una cipolla media, 200 gr fagioli freschi borlotti sgranati, una gamba di sedano, mezza verza, un pomodoro, una carota, due porri, due cucchiai di piselli, una patata.



Preparazione:

lavare e tagliare tutta la verdura a quadretti, esclusa la cipolla. Mettere il tutto in una casseruola, unirvi losso di prosciutto, le cotenne di maiale tagliate a listarelle e i fagioli. Versarvi 4 lt dacqua
e portare ad ebollizione, salare, coprire con coperchio e lasciare cuocere 2 ore circa.
Mentre cuociono le verdure, in un altro recipiente fare imbiondire la cipolla con lardo e olio, unire il salame di fegato pestato finemente. Aggiungere il riso, versare vino rosso e mescolare.
Aggiungere poco alla volta il minestrone di verdure preparato a parte, sino a cottura ultimata del riso (circa 18) quindi unire una manciata di parmigiano e servire.

Deep Blue Carrot and Sorrel Salad - Chef René Redzepi (Engl)


Ingredients:

Carrots


4 deep blue carrots
200g of goats butter
aromatic herbs for sauteing, such as lemon thyme, chamomile, sage, marjoran and normal thyme
Sea salt

Butter emulsion

100g of water
200g of goats butter

Garnish

40 big sorrel stems, leaves kept for juice
8 small sheep sorrel
8 red sorrel
8 daisy leaves
8 sprouge shoots
40 small hemlock shoots
40 small garden sorrel

Sorrel juice

4 green apples
sorrel scraps from making the stems
10g of grapeseed oil

1. For the carrot: Saute the carrots in a little oil. Turn down the heat and add the goats butter and herbs. Slow cook the carrots for approx 45 min. keep adding aromatic herbs and basting with the butter until they are cooked through. Cut them lengthwise in half's and brush some of the butter on and season with salt.

2. For the butter emulsion: Cook the butter and water together and handblend it for a creamy emulsion.

3. For the garnish: Place the sorrel stems in a sieve and pour the hot butter emulsion over just before serving. All the different sorrel leaves and herbs are cleaned and refreshed in ice water. Spin off all water and keep in an airtight container.

4. For the sorrel juice: Blend the apples and sorrel scraps together for 1 min. strain through a fine sieve and split with the grapeseed oil. Keep it cold.

5. Serving: Put two pieces of carrot on a semi-deep plate. Start dressing with the in butter emulsion warmed up sorrel stems and continue with all tips of sorrel and herbs. Finish the dish with a good amount of warmed up sorrel juice on a plate.

Eggs Benedict (Engl)

Part 1

English Muffins

Makes 12 servings

- 1 1/2 teaspoons active dry yeast
- 1 cup water, warmed to 110°F
- 2 cups all-purpose flour
- 1 tablespoon unsalted butter, softened
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 cup cornmeal, or as needed
- Oil or solid vegetable shortening, as needed



Part 2

Eggs Benedict


Makes 8 servings
16 slices Canadian bacon
16 poached eggs
8 English muffins, split, toasted, and buttered
2 cups Hollandaise sauce
When poaching eggs, use the freshest eggs possible. Fresh eggs produce a centered yolk, compact white, and clean edge when cooked. The poaching liquid should be about three inches deep, at a gentle simmer, and it should contain a small amount of salt and vinegar to firm the egg proteins and to prevent the whites from separating.
Directions
Heat a sauté pan over medium-low heat. Add the Canadian bacon and sauté on both sides until heated through, about 1–2 minutes on each side.
If eggs have been poached in advance reheat them in simmering water until warmed through and blot on toweling. Top each English muffin half with a slice of Canadian bacon and a poached egg. Spoon warm Hollandaise over each egg and serve.
Poached Eggs
Makes 8 servings
3 quarts water, or as needed
2 teaspoons salt
4 teaspoons distilled white vinegar
16 large eggs
1. Combine the water, salt, and vinegar in a deep pan and bring to a gentle simmer.
2. Break each egg into a clean cup, and carefully slide each egg into the poaching water. Cook until the whites are set and opaque, about 3 minutes.
3. Remove the eggs from the water with a slotted spoon and blot them on absorbent toweling. Serve immediately or store chilled eggs in the refrigerator until needed.

Ingredients

Makes 2 cups

- 1/2 teaspoon cracked peppercorns
- 1/4 cup white wine or cider vinegar
- 1/4 cup water, or as needed
- 4 large fresh egg yolks

Recipe

● 12 slices bread
● 1-2 T. butter, softened
● 8 oz. cream cheese
● 3 T. mayonnaise
● 3 green onions, finely chopped
● 3 drops Tobasco sauce
● 3/4 cup Parmesan cheese

1. Cut out 24 (2") circles out of bread. Butter one side of the bread. Place on baking sheet and broil the buttered side until browned. Set aside.

2. In a bowl, mix together the cream cheese, mayo, onions, Tobasco and 1/2 cup of the Parmesan cheese.

3. Turn the bread rounds over and spread with the cream cheese mixture, making sure to mound slightly. Place the last 1/4 cup of Parmesan cheese on a small plate and dip the tops of the puffs into the cheese. Place back on the baking sheet. Broil until puffy and light brown. (You may want to move the pan around so that they will brown evenly.

Note: These puffs can be made ahead and frozen. Before the final broil, take the puffs (while they are still on the baking sheet) and place them in the freezer. Once frozen, take them off the sheet and place them in a freezer-storage bag. When you're ready to serve them, place them on a baking sheet, let them thaw at room temperature for 15 minutes, then broil until puffy and light brown.

Già una tomba etrusca di Cerveteri era ornata da un motivo di coltelli, mattarelli e rotelle somiglianti a quelle ancora oggi usate per la preparazione dei ravioli.
Gli antichi Romani conoscevano la pratica di impastare la farina con acqua e di stenderla in una larga sfoglia chiamata lagana (antenata della lasagna), tagliata poi a larghe falde e cucinata. Il cuoco Apicio nel suo libro di cucina, raccomandate l’uso di qualcosa di simile alle lasagne per “racchiudervi timballi e pasticci”.
Gli Arabi escogitarono il metodo dell’essiccazione della pasta per poterla trasportare come scorta alimentare e la diffusero in tutto il bacino del Mediterraneo.
L’Italia si trova a essere il punto di incontro di due tradizioni gastronomiche, quella romana e quella araba.
Palermo è storicamente la prima vera capitale della pasta, perché qui si hanno le prime testimonianze storiche di produzione di pasta secca a livello artigianale-industriale.
Nel Medioevo si ampliano anche i formati delle paste: larghe, strette, corte, lunghe, forate, ripiene…
Nel XII secolo i mercanti genovesi sono il principale tramite di diffusione della pasta siciliana nelle regioni del Nord e la Liguria è anche luogo di produzione. Tra XV e XVI secolo si diffonde in Liguria la produzione artigianale dei “fidei” (tipo di pasta così chiamata nel dialetto locale e antenata di “fidelini” o “fedelini”) e altre zone importanti di produzione sono la Puglia e la Sicilia. L’area padana rimane invece più legata all’uso domestica della pasta fresca.







Nel XVII la pasta inizia ad assumere un ruolo particolare e ciò si verifica soprattutto a Napoli dove la crescita demografica aggrava la situazione alimentare e nella quale si verifica una rivoluzione tecnologica (l’invenzione del torchio meccanico) che permette di produrre pasta a prezzo più conveniente.
Dal XVIII secolo la pasta diventa così sempre più protagonista dell’alimentazione popolare e non a caso ai napoletani viene dato l’appellativo di “mangiamaccheroni”.
Nello sviluppo della produzione della pasta a livello industriale molto hanno anche contato il clima partenopeo e la vicinanza al mare che favoriscono, in Campania, in Liguria e in Sicilia, la migliore essiccazione e la conservazione a lungo del prodotto.

La Caccavella (IT)




La Caccavella, la Pasta più grande del Mondo

50 grammi per pezzo, 9 cm di diametro e 6 di altezza, per un piacere sempre al dente, la Caccavella ('tegamino') è il formato di pasta più grande sul mercato.
La sua forma è quella di una pentolina e così si chiama in napoletano: caccavella.

Il consiglio è cuocere per 10 minuti in abbondante acqua bollente salata, farcire col condimento preferito e ripassare in forno per altri 15 minuti. Una caccavella a porzione, naturalmente.
